Fall ’21: GLAS 230—Cultural Politics of Asian American Food

This is a collective cookbook containing original recipes that students created based on their research of a particular region in Asia. The recipes demonstrate the students' creativity in creating or reinventing dishes that reflect the spirit of that region. In doing so, the recipes also narrate their biographies as they fuse their stories with the ingredients and histories of a region. All of the dishes were created and prepared by students themselves. They also made tutorial videos to accompany their recipes. Included in these pages are various student reflections and artwork as well as recipes from guest chefs who generously shared their stories with us.
